INGREDIENTS
Dry Ingredients
- 1 cup flour
- 1 cup whole wheat flour
- 🧂 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/4 cup brown sugar
Wet Ingredients
- 🥛 1 cup milk, 1% low-fat
- 🥚 2 eggs
- vanilla
- 1/4 cup margarine or butter
Toppings
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
STEPS
Preheat oven to 400 °F and prepare a 12-cup muffin pan, either oiling it lightly or using paper muffin cups.
Mix sugar and cinnamon for topping in a small bowl; set aside.
In a large bowl, combine flour, salt, baking powder, and brown sugar.
In a separate measuring cup, mix milk, eggs, vanilla, and melted margarine or butter until well combined.
Pour milk mixture into the dry ingredient mixture and stir lightly until just moistened. Batter will be thick and lumpy.
Fill muffin cups two-thirds full with batter and sprinkle 1/4 teaspoon of cinnamon sugar topping on each muffin.
Bake in the oven for 20-25 minutes until muffins are golden brown.
Serve warm or freeze leftovers for later.
