INGREDIENTS
Dry Ingredients
- 1 ¾ cups all-purpose flour
- 4 teaspoons baking powder
- ¼ cup white sugar
- 🧂 ⅛ teaspoon salt
Butter and Dairy
- 🧈 5 tablespoons unsalted butter
- 🥛 ½ cup milk
- ¼ cup sour cream
Egg and Others
- ½ cup dried currants
- 🥚 1 egg
- 🥛 1 tablespoon milk
STEPS
Preheat the oven to 400°F (200°C). Grease a baking sheet.
Sift flour, baking powder, sugar, and salt into a large bowl. Cut in butter using a pastry blender or fingers until pea-sized lumps form. Stir in currants.
Whisk milk and sour cream together, then gently stir into the dry mixture until dough is moistened. Avoid overworking.
With floured hands, form dough into 2 to 3-inch diameter balls. Place onto greased baking sheet and flatten slightly, ensuring scones are slightly touching.
Whisk egg and milk together to create an egg wash. Brush over scones and let rest for approximately 10 minutes.
Bake in the oven for 10–15 minutes until tops are golden brown.
