INGREDIENTS
Pastry
- 1 frozen puff pastry sheet (20x20cm)
Meat
- 60g ground pork
Vegetables
- 🥒 100g zucchini, sliced 5mm thick
- 🍅 4 cherry tomatoes, halved
Seasoning
- 1/2 tbsp olive oil
- đź§‚ Pinch of salt and pepper
Egg Mixture
- 🥚 2 eggs, beaten
- 🥛 80cc heavy cream
- đź§‚ 1/3 tsp salt
- đź§€ 3 tbsp grated cheese
- đź§‚ Pinch of pepper
For Tart Mold
- Olive oil as needed
STEPS
Slice the zucchini into 5mm thick pieces and halve the cherry tomatoes.
Heat 1/2 tbsp olive oil in a pan over medium heat. Add ground pork and cook until browned. Add zucchini and sauté until softened. Season with salt and pepper, then let cool.
In a bowl, mix the beaten eggs, heavy cream, salt, grated cheese, and pepper to make the egg mixture.
Roll out the puff pastry sheet slightly larger than the tart mold. Grease the mold with olive oil and press the pastry into the mold. Trim excess pastry and use it to patch any gaps.
Spread the cooked filling evenly over the pastry. Pour the egg mixture on top and arrange the halved cherry tomatoes. Bake in a preheated oven at 200°C for 20–25 minutes until set and golden.
