INGREDIENTS
Brownie Batter
- 🧂 1 ½ cups white sugar
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 ½ teaspoons baking soda
- 🧂 1 teaspoon salt
- 🍆 2 cups shredded zucchini
- 🌰 ½ cup chopped walnuts
Frosting
- 6 tablespoons unsweetened cocoa powder
- 🧈 ¼ cup butter or margarine
- 🧂 2 cups confectioners' sugar
- 🥛 ¼ cup milk
- ½ teaspoon vanilla extract
STEPS
Preheat the oven to 350°F (175°C) and prepare a 9x13-inch baking pan by greasing and flouring.
Mix sugar, vegetable oil, and vanilla extract in a bowl until well blended.
Combine flour, cocoa powder, baking soda, and salt in a separate bowl, then mix into the sugar mixture.
Fold in the shredded zucchini and chopped walnuts, then spread the batter evenly into the prepared pan.
Bake for 25-30 minutes until the top is dry and edges pull away from the pan. Let cool for 20 minutes.
Make the frosting by whisking cocoa powder and butter over medium-low heat until smooth and glossy. Let cool.
Blend confectioners' sugar, milk, and vanilla extract, then stir into the cooled cocoa mixture. Spread over cooled brownies.
Cut into squares and serve.
