INGREDIENTS
Fruits
- 1 pound plums
- 🍋 1 teaspoon lemon juice
- 🍬 2 tablespoons white sugar
- 1 tablespoon cornstarch
- ½ teaspoon vanilla extract
Dry Ingredients
- 🌾 ¼ cup all purpose flour
- 🍬 2 tablespoons white sugar
- ¼ teaspoon baking powder
- 🧂 1 pinch salt
Wet Ingredients
- 🧈 1 ½ tablespoons butter
- 💧 1 tablespoon boiling water
STEPS
Preheat the oven to 400 degrees F (200 degrees C). Coat a baking dish with cooking spray.
Halve and pit the plums, then slice or quarter them and place in a baking dish. Drizzle lemon juice over fruit, add sugar, cornstarch, and vanilla extract, then toss to coat.
Combine flour, sugar, baking powder, and salt in a bowl. Cut butter into small cubes and mash into the mixture until crumbly. Stir in boiling water to form a dough.
Drop spoonfuls of the dough on top of the plums. Bake for 25-30 minutes or until the cobbler top is lightly browned and a toothpick comes out clean.
