Fish
- 🐟 4 sardines, filleted (320g)
Vegetables
- 🍅 1/2 tomato, diced (100g)
- 🧅 5cm green onion, minced (15g)
Oil
- Salad oil, as needed
Seasoning
- 🧂 1/4 tsp salt
- 🍋 2 tsp lemon juice
- Pinch of black pepper
- 1/3 tsp chicken stock powder
- 1 tbsp sesame oil
- 1/3 tsp grated ginger
Breading
- Flour, as needed
- 🥚 1 egg
- Breadcrumbs, as needed
Garnish
- 🧅 Chopped green onion, as needed
步驟
Dice the tomato into 1cm cubes and mince the green onion.
Mix the seasoning ingredients (salt, lemon juice, black pepper, chicken stock powder, sesame oil, and grated ginger) in a bowl. Add the diced tomato and minced green onion, and mix gently to create the tomato-green onion sauce.
Coat the sardines in flour, then dip them in beaten egg, and finally cover them with breadcrumbs.
Heat salad oil in a pan to 180°C. Fry the sardines until golden brown and crispy, about 5 minutes per side.
Plate the fried sardines and drizzle the tomato-green onion sauce over them. Garnish with chopped green onion.
