INGREDIENTS
Protein
- 🍗 4 (8 ounce) skin-on, bone-in chicken thighs
- 🥓 4 slices bacon, cut into 1/2 inch pieces
Spices & Seasonings
- 1 teaspoon paprika
- 🧂 Salt and pepper to taste
Liquid & Dairy
- 1/3 cup low-sodium chicken broth
- 🥛 1/4 cup heavy whipping cream
Vegetables
- 🍄 4 ounces sliced mushrooms
- 🧅 2 green onions, white and green parts separated and sliced
STEPS
Preheat the oven to 400°F (200°C) and gather all ingredients.
Season chicken thighs on all sides with paprika, salt, and pepper.
Cook bacon in a cast iron skillet over medium-high heat until browned, about 4-5 minutes, then remove and drain on a paper towel-lined plate. Discard excess grease.
In the same skillet, cook chicken thighs skin-side down for 3-4 minutes. Flip chicken over and place the skillet in the oven.
Bake chicken thighs in the oven for about 30 minutes until fully cooked (internal temperature of 165°F/74°C). Remove from skillet and cover with foil.
Pour chicken broth into the skillet over medium-high heat, deglazing the skillet by scraping up brown bits. Add mushrooms and cook until softened, about 3-4 minutes.
Add heavy whipping cream and bring to a light simmer. Season with additional salt and pepper if needed.
Return cooked chicken to the skillet, top with bacon and green onions, and serve with sauce spooned over the chicken.
