- 🥔 2 potatoes (300g)
- 1/2 pack shimeji mushrooms
- 🧅 1 tbsp chopped green onion

步驟
Wash the potatoes thoroughly, cut them in half, and slice into 5mm thick pieces without peeling. Soak in water for 5 minutes and drain. Separate the shimeji mushrooms into bite-sized pieces.
Cut the chikuwa in half lengthwise, then slice diagonally into 5mm thick pieces.
Make a slit in the mentaiko and extract the contents.
Place the potato slices in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 6 minutes.
Add the shimeji mushrooms, chikuwa, mayonnaise, and mentaiko to the potatoes and mix well. Spread the mixture onto a heatproof dish and sprinkle with pizza cheese.
Bake in a toaster oven for 5–6 minutes until the cheese melts and turns golden brown. Sprinkle with chopped green onion before serving.
