- 600g pork neck
Meat Seasoning
- 1 tbsp ginger wine
- Pinch of black pepper
Steak Sauce
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 tbsp tonkatsu sauce
- 2 tbsp oligosaccharide
- 4 tbsp cooking wine
- 1 tbsp minced garlic
- 1/2 cup water
Vegetables
- 🥚 1 egg
- 4 Brussels sprouts
- 1 shiitake mushroom
- 3 mini paprika
- 1 small potato
- 🧂 Pinch of salt
- Pinch of black pepper
Salad
- 10 romaine leaves
- 2 cabbage leaves
- 1 purple cabbage leaf
- 🍅 5-6 cherry tomatoes
Salad Dressing
- 2 tbsp heavy cream
- 4 tbsp mayonnaise
- 1.5 tbsp vinegar
- 1.5 tbsp oligosaccharide
- 1 tbsp olive oil
步驟
Tenderize pork neck with the back of a knife, score both sides, and marinate with ginger wine and black pepper for 30 minutes.
Prepare salad by washing and cutting romaine into bite-sized pieces, shredding cabbage, and halving cherry tomatoes.
Cut shiitake mushrooms into quarters, halve Brussels sprouts, and slice mini paprika lengthwise.
Mix all salad dressing ingredients thoroughly. Adjust sweetness and acidity to taste.
Prepare steak sauce by combining soy sauce, oyster sauce, tonkatsu sauce, oligosaccharide, cooking wine, minced garlic, and water.
Fry an egg sunny-side up in a heated pan with ample oil over low heat.
Slice potato into wedges, pan-fry until golden, and season with herb salt while hot.
Sauté mushrooms, Brussels sprouts, and mini paprika in olive oil, seasoning with salt and pepper. Cook until vegetables are slightly tender.
Pan-fry pork neck until golden on both sides, then add steak sauce and simmer until the meat is glazed and tender.
Plate pork steak, fried egg, sautéed vegetables, and salad. Serve with extra salad dressing on the side.
