INGREDIENTS
Vegetables
- 🥔 2 large potatoes, peeled and thinly sliced
- 🧅 1 sweet Spanish onion, thinly sliced
- 1 bunch fresh parsley, coarsely chopped

- 🧂 Salt and pepper to taste
- ¼ teaspoon smoked paprika

STEPS
Preheat the oven to 350°F (175°C).
Heat 1 tablespoon olive oil in an oven-proof skillet over medium heat until it shimmers. Add thinly sliced potatoes and season with salt, pepper, and smoked paprika. Pan-fry for about 8 minutes, stirring occasionally.
Add sliced onion to the potatoes and cook until lightly browned and translucent, about 10 minutes. Remove the skillet from heat and allow to cool for 5 minutes.
In a large bowl, beat eggs with 1 teaspoon olive oil. Stir in chopped parsley and combine with the cooled potato-onion mixture.
Heat 1 tablespoon olive oil in the same skillet over medium heat until it shimmers. Add egg-potato mixture to the skillet. Reduce heat to medium-low and shake the skillet to loosen the omelette from the bottom.
Transfer the skillet to the preheated oven and bake for about 5 minutes, until the tortilla is puffed and golden. A toothpick inserted in the center should come out clean. Cut into pieces and serve.
