- 🍖 500g pork spare ribs
Vegetables
- 🧅 1 onion, quartered
- 🧄 4 cloves garlic
- 2 slices ginger
- 🌱 Spring onion, for garnish
- 🌿 Cilantro, for garnish
Spices
- 🌿 1 cinnamon stick
- 1 star anise
- 1 bay leaf
- 4 cardamom pods
- 4 cloves
Seasonings
- 🧂 1 tsp salt
- 🧂 2 tbsp soy sauce
- 1 tsp chicken stock powder
- Pinch of black pepper
- 💧 1500ml water

Quarter the onion.

Place the pork spare ribs in a pot, cover with water, and bring to a boil. Drain and rinse the ribs to remove impurities.

Clean the pot, then add the pork spare ribs, onion, garlic, ginger, spices (☆), and seasonings (★). Heat over medium heat until boiling, then reduce to low heat and simmer for 2 hours, skimming off any scum occasionally.

Serve in bowls, garnished with spring onion and cilantro.
