Cut the bamboo shoot into sections: halve the tip vertically and cut into wedges, then halve the root and slice thinly. Halve the garlic, remove the core, and crush with the flat side of a knife.

Heat olive oil, garlic, salt, and chili in a pan over low heat until fragrant. Add shrimp and bamboo shoot, then cook over medium heat until the shrimp changes color.
