    • 200g pork loin slices
    • 🧈 150g firm tofu
    • 300g cabbage
    • 🥕 60g carrot
    • 50g shimeji mushrooms
    • 🧅 80g green onion
  • Soup Base

    • 1 tbsp sake
    • 4 tbsp white dashi
    • 💧 300ml water
    • 300ml unsweetened soy milk

Cut tofu into bite-sized pieces.

Slice cabbage into 3cm widths, peel and slice carrot into 5mm rounds, trim and separate shimeji mushrooms, and cut green onion diagonally into 1cm slices.

Heat all soup base ingredients except soy milk in a pot over medium heat. Once boiling, add prepared vegetables and tofu, cover, and simmer on low heat for 5 minutes.

Add soy milk and warm gently. Add pork slices one by one, cooking until the color changes.
