    • 🧂 2 tbsp soy sauce
    • 1/3 tsp dashi powder
    • 💧 100cc water

Prepare shrimp by removing shells, deveining, and making 3–4 cuts on the belly side. Pat dry and lightly coat with tempura flour.

Cut eggplant in half lengthwise, make diagonal cuts on the surface, and prepare asparagus by peeling the lower half and cutting into thirds. Remove shiitake stems and score the caps. Lightly coat all vegetables with tempura flour.

Mix tempura flour and water in a bowl to create the batter.

Heat the tempura sauce ingredients in a pot until boiling, then simmer for 2 minutes until reduced by two-thirds.

Heat salad oil to 170°C and fry vegetables for 1–2 minutes. Fry shrimp until they float, about 1–2 minutes.

Serve rice in bowls, top with fried shrimp and vegetables, and drizzle with tempura sauce.
