Vegetables
- 🍆 400g eggplant, sliced
- 120g oyster mushrooms, cleaned
- 🧄 20 cloves garlic
- 1 red chili, chopped
Seasonings
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 tbsp perilla oil
- 1 tbsp sesame seeds
- 1/2 tbsp chili powder
- 2 tbsp cooking wine
- 2 tbsp corn syrup
- 1 tbsp sesame oil
- a dash of black pepper
- 1 tbsp chopped green onion
步驟
Slice eggplants into 2cm thick pieces and clean oyster mushrooms by removing the base and rinsing lightly.
Pan-fry eggplants on medium heat without oil until golden brown on both sides.
Prepare garlic cloves and chop red chili into small pieces.
Heat 2 tbsp perilla oil in a wok on medium heat, then sauté garlic and chili for 2 minutes until fragrant.
Add soy sauce, oyster sauce, chili powder, cooking wine, and corn syrup to the wok and mix well.
Add eggplants and oyster mushrooms to the wok and stir-fry for 1 minute on medium heat.
Turn off the heat and add sesame seeds, sesame oil, black pepper, and chopped green onion. Mix thoroughly.
Serve the braised eggplant and mushrooms on a plate and drizzle with remaining sauce.
