- 🍗 1 piece (250g) chicken thigh
Vegetables
- 🥬 200g cabbage
- 🍄 50g shimeji mushrooms
- 1 piece ginger
Oils
- 1 tsp salad oil
- 1/2 tbsp sesame oil
Seasonings
- 2 tbsp sake
- 4 tbsp ponzu sauce
- 💧 2 tbsp water

Cut the chicken into bite-sized pieces.

Cut the cabbage into manageable pieces, trim the shimeji mushroom roots, and shred the ginger.

Heat salad oil in a pan over medium heat, add chicken skin-side down, and cook until browned. Add cabbage, mushrooms, and ginger, mix briefly, then pour the seasoning mixture and cover with a lid. Steam on low heat for 6–7 minutes.

Remove the lid, drizzle sesame oil, and mix gently.
