    • 3 fried tofu pouches (60g)
    • 🥬 150g cabbage
    • 50g maitake mushroom

    • 🧂 1/3 tsp salt
  • Seasoning

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1/2 tbsp sugar
    • 1 1/2 tbsp soy sauce
    • 1/3 tsp Japanese dashi powder
    • 💧 200ml water

Cut the cabbage into 1cm strips. Place the cabbage and salt in a bowl, massage until softened, and squeeze out excess water. Tear the maitake mushroom into small pieces.

Pour boiling water over the fried tofu pouches to remove excess oil, then drain and cool. Cut each pouch in half and open them to form pockets.

Fill each tofu pouch with cabbage, an egg, and maitake mushroom in equal portions. Seal the opening with a toothpick. Repeat to make 6 pouches.

Place the pouches in a pot, add the seasoning ingredients, and heat over medium heat until boiling. Reduce to low heat, cover, and simmer for 10 minutes.
