Main Ingredients
- 🥬 10–12 leaves cabbage
- 🥩 300g beef
- 🥕 1 carrot
- 1/2 paprika
- 2 sheets fish cake
- 🥒 1/2 zucchini
- 1 handful chives
- 🍄 1/2 pack enoki mushrooms
- 2 handfuls bean sprouts
Broth
- 💧 1L water
- 1 anchovy stock pack
- 2 tbsp soy sauce
- 2 tbsp tuna sauce
- 🧂 1/3 tbsp salt
Wasabi Sauce
- 3 tbsp soy sauce
- 2 tbsp anchovy kelp stock
- 1 tbsp vinegar
- 🍬 1 tbsp sugar
- a pinch of wasabi
步驟
Boil water with the anchovy stock pack until the broth is infused.
Remove the stock pack and season the broth with soy sauce, tuna sauce, and salt.
Thinly slice carrot, paprika, fish cake, and zucchini. Prepare other vegetables as needed.
Cut chives into 6–7 cm lengths and trim the enoki mushroom stems.
Blanch cabbage leaves in boiling water for 40–50 seconds.
Rinse the blanched cabbage in cold water and squeeze out excess moisture.
Place a cabbage leaf on a cutting board, layer with beef and sliced vegetables, then roll tightly.
Cut the rolled cabbage into thirds for easier serving.
Layer bean sprouts on the bottom of a pot and arrange the cabbage rolls on top.
Pour broth into the pot until the rolls are 1/3 submerged and simmer until cooked.
