Main Ingredients
- 🥚 3 eggs
- 🧂 120g brown sugar
- 100ml canola oil
- 140g cake flour
- 1/2 tsp cinnamon powder
- 1 tsp baking powder
- 🥕 200g grated carrot
- 🌰 60g chopped walnuts
Decoration
- 120g cream cheese
- 🧂 1 tbsp sugar
- 50g plain yogurt
步驟
Prepare eggs at room temperature. Grate or finely chop the carrot and walnuts.
Whisk eggs for 30 seconds, then add brown sugar and whisk for 2 minutes. Add canola oil and mix thoroughly.
Sift cake flour, baking powder, and cinnamon powder into the mixture and fold gently.
Add grated carrot and chopped walnuts to the batter. Transfer the batter to a piping bag.
Line muffin tins with parchment paper and fill each tin up to 80% with batter.
Bake in a preheated oven at 180°C for 20–25 minutes.
Prepare the decoration by mixing cream cheese, sugar, and plain yogurt. Pipe onto cooled muffins.
Add carrot decorations on top for a final touch.
