Main Ingredients
- 🍗 1 piece (250g) skinless chicken breast
- 🧂 1/3 tsp salt
- A pinch of black pepper
- 🌾 Enough flour for coating
Cooking Oils & Fats
- 1 tbsp olive oil
- 🧈 10g salted butter
Sauce Ingredients
- 🍷 50cc white wine
- 🧂 A pinch of salt
- 🍋 2 tbsp lemon juice
- 🧈 10g salted butter
步驟
Slice the chicken breast diagonally into 4 pieces. Cover with plastic wrap and pound with the heel of your hand until about 5mm thick. Season with salt and pepper, coat lightly with flour, and shake off excess.
Heat olive oil and butter in a frying pan over medium-low heat. Once the butter melts, add the chicken and cook until golden brown on one side. Flip and cook until fully cooked through. Remove and plate.
In the same pan, add white wine and bring to a boil over medium-high heat to evaporate the alcohol. Reduce until slightly thickened.
Add the sauce ingredients (salt, lemon juice, and butter) to the pan and simmer until thickened. Pour over the chicken and serve.
