Cut the chicken breast into 1cm slices at an angle (sogigiri). Sprinkle with salt and lightly coat with cornstarch.

Heat salad oil in a pan over medium heat. Add the chicken and cook for 2 minutes until browned. Flip and cook for another minute until fully cooked. Add the seasoning ingredients and simmer until the sauce thickens.

Serve the rice in a bowl, layer with lettuce, chicken, and drizzle the sauce over. Top with an onsen egg.
