Cut the chikuwa in half lengthwise and slice diagonally. Trim the roots of the enoki and kaiware, and cut the enoki in half.

Heat butter in a frying pan, add chikuwa and enoki, and stir-fry briefly. Add lemon juice and soy sauce, stir to combine, then add kaiware and stir briefly to finish.
