Cut the bok choy into 4cm pieces, separating stems and leaves. Quarter the shiitake mushrooms, including stems.

Mix soy sauce, oyster sauce, chicken stock powder, and water in a bowl to create the sauce.

Heat 1 1/2 tsp sesame oil in a pan over medium heat. Stir-fry bok choy stems and shiitake mushrooms for 3-4 minutes until bok choy softens. Add bok choy leaves and stir briefly.

Push vegetables to the side of the pan. Add 1 tsp sesame oil and beaten eggs, stirring until semi-cooked. Add the sauce to the vegetables and mix everything together. Season with salt and pepper.
