Fish
- 🐟 6 sardines (120g)
Vegetables
- 4 shiso leaves
- 60g pickled ginger
Oil
- Enough salad oil for frying
Batter
- 50g tempura flour
- 💧 80cc water
步驟
Make a cut along the belly of the sardines towards the tail fin. Wash out the innards under running water and pat dry with kitchen paper.
Finely chop the shiso leaves and pickled ginger. Mix them together in a bowl.
Stuff the mixture evenly into the cuts made in the sardines.
Prepare the batter by mixing tempura flour and water in a tray.
Heat 2cm of salad oil in a frying pan to 170°C. Dip the stuffed sardines into the batter and fry for about 4 minutes, turning occasionally until crispy.
