- 150g thinly sliced pork belly
Vegetables
- 2 eggplants
- 🍅 1 tomato (200g)
- Chopped green onion, as needed
Seasoning
- 🧂 A pinch of salt and pepper
- Potato starch, as needed
- 2 tbsp salad oil
Spicy Sauce
- 1 tbsp vinegar
- 1 tbsp soy sauce
- 1 tbsp white sesame paste
- 1 tsp white sesame seeds
- 1 tsp grated ginger
- 2 tbsp sesame oil
- 1/2 tbsp chili oil
步驟
Cut pork belly into 3cm strips, season with salt and pepper, and coat with potato starch.
Cut eggplants into bite-sized pieces and coat lightly with potato starch. Slice tomato into 8mm thick pieces after removing the stem.
Heat salad oil in a frying pan over medium heat. Cook pork until its color changes, then push to the side. Add eggplant skin-side down and cook until both pork and eggplant are golden brown.
Mix all spicy sauce ingredients in a bowl.
Arrange tomato slices on a plate, top with pork and eggplant, drizzle with spicy sauce, and garnish with chopped green onion.
