- 1 handful of chives
Seasoning
- 2 tbsp chili powder
- 🧄 1 tbsp minced garlic
- 🧂 1 tbsp sugar
- 2 tbsp fish sauce
- 1 tbsp plum extract
Brining
- 🧂 1.5 tbsp salt
- 🧂 1 tbsp sugar
步驟
Clean cucumbers thoroughly with water mixed with salt and vinegar.
Cut cucumbers into quarters and remove the seeds.
Brine cucumbers with 1.5 tbsp salt and 1 tbsp sugar for 30 minutes.
After 30 minutes, rinse cucumbers under running water and drain.
Cut chives to match the length of the cucumbers.
Mix garlic, chili powder, sugar, fish sauce, and plum extract in a bowl.
Combine cucumbers and chives with the seasoning mixture.
Serve the cucumber chive kimchi immediately or store in the fridge.
