Main Ingredients
- 120g ground pork
- 🥔 2 medium potatoes (240g)
- 🧅 1/2 onion (100g), minced
- 🧂 1/3 tsp salt
- A pinch of black pepper
- 1 tbsp vegetable oil
- Chopped parsley, as needed
Seasoning
- 2 cubes curry roux (40g)
- 💧 100cc water
Toasted Breadcrumbs
- 5 tbsp breadcrumbs
- 2 tbsp vegetable oil
步驟
Peel and cut the potatoes into bite-sized pieces. Soak them in water for 3 minutes, then drain. Place the potatoes in a bowl, cover with plastic wrap, and microwave at 600W for 6 minutes until soft. Mash with a fork.
Mince the onion.
In a frying pan, add 2 tbsp of vegetable oil and breadcrumbs. Stir and toast over low heat until golden brown. Transfer to a container.
Wipe the frying pan clean with a paper towel. Heat 1 tbsp of vegetable oil, then add the ground pork and minced onion. Cook over medium heat until the onion becomes translucent. Season with salt and pepper.
Add the curry roux and water to the pan. Stir and cook over medium heat until thickened.
Combine the mashed potatoes with the curry mixture. Transfer to a serving dish, top with toasted breadcrumbs, and garnish with chopped parsley.
