Fish
- 🐟 4 sardines
Vegetables
- 5 cm daikon radish
- 1 piece ginger
Flour
- sufficient amount of all-purpose flour
Oil
- sufficient amount of salad oil
Seasoning (Marinade)
- 1 tbsp sake
- 1/2 tbsp ginger juice
- 🧂 1/2 tbsp soy sauce
Seasoning (Broth)
- 💧 200 ml water
- a pinch of dashi powder
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 🧂 1 tbsp soy sauce
步驟
Cut off the sardine heads at the base of the pectoral fins, make an incision on the belly side, remove the guts, and wash thoroughly.
Open the sardines by hand, remove the backbone, trim the belly bones, and pat dry.
Mix the marinade ingredients in a bowl and pour over the sardines. Let them marinate for 5 minutes.
Grate the daikon radish and squeeze out excess water. Slice the ginger into thin strips.
Pat the sardines dry and coat them with all-purpose flour.
Heat salad oil in a frying pan to 170°C (340°F) and fry the sardines until golden brown and cooked through.
Combine the broth ingredients in a pot, heat over medium heat, and bring to a boil.
Plate the fried sardines, pour the broth over them, and garnish with grated daikon radish and sliced ginger.
