食材
Chicken
- 🍗 300g chicken thigh
Coating
- 3 tbsp potato starch
- 3 tbsp all-purpose flour
- 2 tbsp potato starch
Oil
- Enough salad oil for frying
Seasoning
- 1 tbsp sake
- 1/2 tbsp soy sauce
- 1/2 tsp grated ginger
- 1/2 tsp grated garlic
步驟
Trim excess fat from chicken thigh and cut into bite-sized pieces.
Place chicken, sake, soy sauce, ginger, and garlic into a plastic bag. Massage well and seal the bag. Let it marinate for 15 minutes.
Add potato starch and all-purpose flour to the bag and massage until evenly coated. Transfer to a tray and coat with additional potato starch.
Heat salad oil in a pan to 170°C. Fry chicken for 1 minute without touching, then flip and fry for 3 minutes. Remove and let rest for 5 minutes.
Increase oil temperature to 180°C. Fry the chicken again for 1 minute, flipping until crispy and cooked through.
