- 1 can (190g) mackerel in water
Vegetables
- 🍆 1 medium eggplant (80g), sliced
Spices
- 🧄 1 clove garlic, crushed
- 1 tsp sliced chili
- 🧂 1/3 tsp salt

- 150ml olive oil

Slice the eggplant into 1cm thick rounds. Cut the garlic in half lengthwise, remove the core, and crush it with the flat side of a knife.

In a pot, heat olive oil, garlic, salt, and chili over low heat until fragrant. Add the mackerel can and simmer over medium heat. Once bubbling, add the eggplant and cook until softened.
