Noodles
- 150g somen noodles
Meat
- 150g ground pork
Vegetables
- 🍆 2 eggplants, 160g
- 30g chives
Seasonings
- 1 tbsp sake
- 🍬 1/2 tbsp sugar
- 1 1/2 tbsp miso
- 🧄 1 tsp grated garlic
- 1/2 tsp grated ginger
- 1 tbsp sesame oil
Sauce
- 2 tbsp concentrated noodle sauce
- 💧 200ml water
步驟
Cut the eggplants into thirds lengthwise, then slice into 1cm pieces. Trim and chop the chives into 1cm pieces.
In a large microwave-safe container, mix ground pork with the seasonings (sake, sugar, miso, garlic, ginger, sesame oil). Add the eggplant and mix well. Cover loosely with plastic wrap and microwave at 600W for 5 minutes until the pork is cooked. Add the chives and mix to loosen. Cover again and let cool slightly.
Boil water in a pot and cook the somen noodles according to package instructions. Rinse with cold water and drain well.
In a bowl, mix the noodle sauce with water to prepare the dipping sauce.
Plate the somen noodles, top with the eggplant pork miso mixture, and pour the dipping sauce over.
