Vegetables
- 🍆 2 eggplants (160g)
- 8 shishito peppers
- 2 myoga
Oil
- 4 tbsp salad oil
Marinade
- 🧂 1 tbsp sugar
- 2 tbsp vinegar
- 2 tbsp soy sauce
- 1 tsp grated ginger

Cut the eggplants into 8 vertical slices. Trim the ends of the shishito peppers and make small cuts. Thinly slice the myoga.

Heat salad oil in a frying pan over medium heat. Fry the eggplants until soft, then add the shishito peppers and stir briefly. Remove from heat.

Mix the marinade ingredients (sugar, vinegar, soy sauce, grated ginger) in a bowl.

Add the fried eggplants, shishito peppers, and sliced myoga to the marinade. Let it sit for 15 minutes.
