Vegetables
- 🍆 1 medium eggplant, sliced
- 1/4 bell pepper, diced
- 🧅 1/2 onion, chopped
- 🧄 1/3 scallion, chopped
Sauce
- 🧄 1 tbsp minced garlic
- 1/2 tbsp sesame oil
- 1 tbsp oyster sauce
- 1 tsp chili powder
- 🧂 1/2 tbsp sugar
- 💧 5 tbsp water
步驟
Slice the eggplant into half-moon shapes and chop the onion, scallion, and bell pepper into small pieces.
Heat oil in a pan over medium heat and stir-fry the scallion for 1 minute.
Add the bell pepper and onion to the pan and stir-fry until softened.
Add minced garlic and stir-fry for another minute.
Add the eggplant and stir-fry until well combined with other ingredients.
Mix sesame oil, oyster sauce, chili powder, sugar, and water, then pour into the pan. Stir-fry until the eggplant absorbs the sauce and becomes soft.
Sprinkle sesame seeds on top for garnish.
Serve the stir-fried eggplant mixture over freshly cooked rice.
