    • 1 tsp soy sauce

    • 1 tsp chicken stock powder
    • 1 tbsp cornstarch
    • 💧 200 ml water

Cut the enoki mushrooms into 1 cm pieces, trim the roots, and slice the chives into 1 cm pieces. Pat the fried tofu with paper towels to remove excess oil and cut into bite-sized pieces.

Mix all the sauce ingredients (marked with ☆) in a bowl until well combined.

Heat sesame oil in a frying pan and sauté enoki mushrooms, grated ginger, and doubanjiang until softened.

Add the fried tofu and stir-fry until lightly browned. Pour in the sauce mixture and cook while stirring until the sauce thickens.
