- 1/2 tbsp vinegar
- 1/2 tbsp sesame oil

Trim the root ends of the enoki mushrooms and cut them into thirds. Separate the root clusters by hand.

Place the enoki mushrooms in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 2 minutes.

In a bowl, mix the yuzu pepper, salt, vinegar, and sesame oil. Add the cooked enoki mushrooms and toss to combine.
