Main
- 180g konjac noodles
- 🍗 1 piece chicken breast (50g)
- 🍅 3 cherry tomatoes
- 🥒 1/2 cucumber (50g)
- 20g cilantro
- 1/2 tbsp sake
Soup
- 1 tbsp noodle sauce (3x concentrated)
- 1/2 tbsp fish sauce
- 🍋 1/2 tbsp lemon juice
- 100ml cold water
Topping
- Chili oil to taste
步驟
Place the chicken breast in a microwave-safe container, sprinkle with sake, cover loosely with plastic wrap, and microwave at 600W for 2 minutes until cooked. Let it cool with the wrap on, separate the cooking liquid, and shred the chicken into bite-sized pieces.
Remove the stems from the cherry tomatoes and cut them into quarters. Slice the cucumber into thin strips. Chop the cilantro into 4cm pieces.
In a bowl, mix the soup ingredients (noodle sauce, fish sauce, lemon juice, cold water) along with the reserved chicken cooking liquid.
Rinse the konjac noodles briefly and drain well. Place the noodles in a serving dish, pour the soup over them, top with shredded chicken, prepared vegetables, and drizzle chili oil.
