Cut the chicken thigh into two pieces, making incisions in thick areas. Rub with salt and pepper.

Heat olive oil in a pan over medium-low heat. Place the chicken skin-side down and cook for about 4 minutes until golden brown. Flip and cook for another 2–3 minutes until fully cooked.

Top the chicken with tomato slices and pizza cheese. Cover the pan and cook on low heat until the cheese melts.
