- 🐟 270g sardines, cleaned
Vegetables
- 90g burdock root, thinly sliced
- 🧅 1/3 stalk green onion, minced
- 1/2 clove ginger, minced
Condiments
- 🥚 1/2 beaten egg
- 1 tbsp miso
- 2 tbsp potato starch
Oil
- Enough salad oil for deep frying

Prepare the sardines by removing the backbone, skin, and finely chopping them.

Thinly slice the burdock root, soak in water, and drain. Mince the green onion and ginger.

Mix the sardines, burdock, green onion, ginger, and seasoning ingredients in a bowl. Divide into 8 portions.

Heat salad oil to 170°C and deep-fry the portions for 3–4 minutes until cooked through.
