Tofu Base
- 🥛 400cc unsweetened soy milk
- 1 tsp nigari
- 🧅 A pinch of chopped green onion
Ginger Sauce
- 1 tsp mirin
- 🧂 A pinch of salt
- 1 tsp soy sauce
- 1/2 tsp Japanese dashi powder
- 1 tsp cornstarch
- 1/2 tsp grated ginger
- 💧 100cc water

Mix soy milk and nigari in a pot over low heat. Heat slowly until it begins to bubble. Turn off the heat, cover, and let it sit for 15 minutes.

In a separate pot, combine all ginger sauce ingredients and heat over medium heat, stirring until thickened.

Pour the ginger sauce over the tofu and garnish with chopped green onion.
