    • 1 tbsp sake
    • 1 1/2 tbsp mentsuyu (3x concentrated)
    • 🧂 Pinch of salt and pepper

Cut the goya in half lengthwise, remove seeds and pith with a spoon, and slice thinly.

Heat half of the salad oil (1/2 tbsp) in a frying pan, pour in the beaten eggs, and stir over medium heat until semi-cooked. Remove the eggs from the pan.

Wipe the pan clean with a paper towel, add the remaining salad oil (1/2 tbsp), and heat. Stir-fry the goya, bean sprouts, and tuna over medium heat briefly.

Add the seasonings (sake, mentsuyu, salt, and pepper) and mix well. Return the eggs to the pan and stir briefly.
