Fish
- 🐟 140g horse mackerel fillets
Vegetables
- 140g yam, sliced into half-moons
- 6 shiso leaves, thinly sliced
Condiments
- 2 plums, pitted and mashed
- Potato starch, as needed
- 1 tbsp salad oil
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 🧂 1.5 tbsp soy sauce
步驟
Slice yam into 1cm thick half-moons. Thinly slice shiso leaves. Pit and mash plums.
Cut horse mackerel fillets into thirds and coat both sides with potato starch, shaking off excess.
Mix mashed plums with sake, mirin, sugar, and soy sauce in a bowl to prepare the sauce.
Heat half the salad oil in a pan over medium heat. Add yam slices and cook until golden on both sides, then remove.
Add the remaining salad oil to the same pan and place horse mackerel skin-side down. Cook until browned, then flip.
Return yam slices to the pan, pour in the plum sauce, and stir to coat evenly. Serve on a plate and garnish with shiso leaves.
