Main
- 🐟 2 fillets hamachi
- 15g ginger, peeled and julienned
- 1 tsp sake
Broth
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 1 tbsp sugar
- 1.5 tbsp soy sauce
- 💧 150ml water

Peel and julienne the ginger, soak in water, then drain.

Sprinkle sake over the hamachi fillets, let sit for 5 minutes, then pat dry.

Combine the broth ingredients in a pan and bring to a boil. Add the hamachi fillets, spoon the broth over them, cover with a drop lid, and simmer on low heat for 10 minutes.

Remove the drop lid and simmer on medium heat until the broth thickens and reduces.

Plate the hamachi and garnish with the julienned ginger.
