Wash the new potatoes thoroughly under running water. Place chopsticks on either side of the potato and make fine cuts, leaving about 1cm at the bottom intact. Microwave the potatoes in a heatproof container covered with plastic wrap for 5 minutes at 600W.

Mix the minced shiso, mentaiko, mayonnaise, and lemon juice in a bowl to make the mentaiko sauce.
