    • 200g ground pork
    • 🧅 1/2 onion, minced (100g)
    • 1 tbsp dried hijiki
    • 🥛 1 tbsp milk
    • 1 tbsp breadcrumbs
    • 1 tsp grated ginger
    • 🧂 1/3 tsp salt
    • Pinch of black pepper
  • Sauce

    • 2 tbsp ponzu sauce
    • 200g grated daikon
  • Side

    • 🍅 4 cherry tomatoes
    • 50g mizuna greens
  • Other

    • 1/2 tbsp vegetable oil

Mince the onion and microwave it in a heatproof container covered with plastic wrap for 1 minute at 600W. Let it cool. Rehydrate hijiki in plenty of water, then drain.

Cut mizuna into bite-sized pieces and grate the daikon, draining excess water.

Mix milk and breadcrumbs in a bowl to moisten. Add the remaining patty ingredients and mix until sticky. Divide into two portions and shape into oval patties.

Heat vegetable oil in a frying pan over medium heat. Cook the patties until browned on one side, then flip, cover, and cook for 7–8 minutes. Remove from the pan.

Wipe excess oil from the pan, add ponzu sauce and grated daikon, and heat until simmering. Plate the patties, garnish with mizuna and cherry tomatoes, and pour the sauce over.
