Main Ingredients
- 🐟 320g sardine fillets
- 3 shiso leaves, chopped
- 1/2 tbsp salad oil
Burger Seasoning
- 🧂 Pinch of salt and pepper
- 1 tsp grated ginger
- 2 tbsp potato starch
Sauce
- 1 1/2 tbsp sake
- 1 1/2 tbsp mirin
- 1 tbsp soy sauce
Side Dish
- Mizuna greens, as needed
- 🍅 Tomato, as needed

Chop the shiso leaves into small pieces.

Remove the skin from the sardines and mince them with a knife until sticky.

Mix sardines, shiso, and burger seasoning in a bowl. Divide into two portions and shape into round patties.

Heat salad oil in a frying pan over medium heat. Cook the patties until browned on one side, then flip and cook for another 2 minutes.

Wipe excess oil with a paper towel, add sauce ingredients, and simmer while flipping until glossy.
