Score the konjac block on both sides in a crosshatch pattern with 5mm intervals. Boil in hot water for 1–2 minutes, drain, and pat dry. Place the konjac in a pot with the broth ingredients and simmer over medium heat for about 8 minutes, stirring occasionally, until the liquid is absorbed. Let cool slightly.

Cut the konjac into bite-sized cubes. Heat a 20cm frying pan lightly coated with salad oil over medium heat. Arrange the konjac pieces in the pan and fry for 3–4 minutes on each side until golden brown. Add butter and soy sauce, tossing to coat.

Turn off the heat, garnish with watercress, and finish with additional soy sauce and butter on top.
