Fish
- 🐟 2 fillets (160g) mackerel
Vegetables
- 🧅 1/4 onion, thinly sliced
- 🍅 5 cherry tomatoes, halved
- 🍋 1 lemon, sliced and juiced
- A pinch of chopped parsley
Seasoning
- 🧂 A pinch of salt and pepper
- Enough flour for coating
- 1 tbsp olive oil
Marinade
- 1 tbsp sugar
- 🧂 1/2 tsp salt
- 🧂 A pinch of pepper
- 2 tbsp water
步驟
Thinly slice the onion, halve the cherry tomatoes, and slice the lemon into thin pieces. Juice the remaining lemon.
Cut the mackerel fillets into thirds using a slanted slicing technique. Season with salt and pepper, then coat with flour.
Mix the lemon juice, sugar, salt, pepper, and water in a bowl. Add the onion and cherry tomatoes, and mix lightly.
Heat olive oil in a pan over medium heat. Place the mackerel skin-side down and cook for 4–5 minutes until golden. Flip and cook for another 3–4 minutes on low heat.
Add the cooked mackerel and parsley to the marinade bowl. Mix gently, add the lemon slices, and refrigerate for 30 minutes before serving.
