    • 🧂 1/2 tbsp soy sauce
    • 1 tsp doubanjiang
    • 1 tsp grated ginger
    • 1/3 tsp grated garlic
  • Thickening Agent

    • 1/2 tbsp cornstarch
    • 💧 1 tbsp water
  • Garnish

    • 1 tsp sesame oil
    • A pinch of shredded chili

Cut off the stem of the eggplants, peel them in stripes, and chop into bite-sized pieces. Mince the white part of the green onion.

In a microwave-safe bowl, add the canned mackerel with its liquid, and mix in the seasonings (☆). Break the mackerel into smaller pieces while mixing. Add the eggplants and green onion, mix well, and cover loosely with plastic wrap. Microwave at 600W for 4–5 minutes until the eggplants are cooked.

Remove the bowl, add the cornstarch slurry, and mix thoroughly. Cover loosely again and microwave for another 1 minute.

Drizzle sesame oil over the dish, plate it, and garnish with shredded chili.
