Kimchi
- 10 sheets matured kimchi
- 1 tbsp sugar
- 1 tbsp sesame oil
Rice
- 🍚 2 cups cooked rice
- 1/2 cup chopped kimchi stem
- 1 tsp sugar
- 2 tbsp sesame oil
- 2 tbsp sesame seeds
Soybean Paste Sauce
- 3 green chilies, chopped
- 🧅 2 tbsp chopped spring onion
- 🧄 1 tbsp minced garlic
- 1 tbsp sesame oil
- 2 tbsp sesame seeds
- 4 tbsp soybean paste
- 1 tbsp red chili paste

Wash the matured kimchi and trim the stem parts. Soak in cold water for 3–5 minutes to reduce saltiness.

Season the kimchi with 1 tbsp sugar and 1 tbsp sesame oil.

Chop the kimchi stems finely and mix with sugar, sesame oil, sesame seeds, and cooked rice.

Prepare the soybean paste sauce by mixing all sauce ingredients in a bowl.

Lay the seasoned kimchi flat, place the rice mixture and soybean paste sauce on top, and roll tightly.
