Make a slit in the mentaiko and extract the contents. Reserve half for garnish.

In a bowl, mix the rice, half of the mentaiko, and butter until the butter melts. Tear 2 shiso leaves into small pieces and mix evenly.

Divide the mixture into serving bowls. Place one shiso leaf on each bowl and top with the reserved mentaiko.
